USDA Egg Products: Shell Eggs Broken Down 5 Percent (Feb 03, 2012)

Shell eggs broken totaled 168 million dozen during December 2011, down 5 percent from December a year ago, and 3 percent below the 174 million broken last month.

During calendar year 2011 through December, shell eggs broken totaled 2,083 million dozen, up 1 percent from the comparable period in 2010. To date, cumulative total edible product from eggs broken in 2011 was 2,699 million pounds, up 1 percent from 2010.

Data presented in this report were compiled from Food Safety and Inspection Service (FSIS) inspection reports. The best available data at the time of publication were used.

December 2010 contained 23 weekdays (including 2 holidays) and 4 Saturdays.
December 2011 contained 22 weekdays (including 1 holiday) and 5 Saturdays.
