Both can replace sugar successfully—when used with the right conversion ratios and recipe adjustments. SUGAR SWAPS: USING HONEY & MAPLE SYRUP AS SUBSTITUTES FOR REFINED SUGAR ARTICLE BY JULIE HARLOW HEALTH MAPLE SYRUP AS A SUGAR SUBSTITUTE Maple syrup is naturally sweeter than granulated sugar, so you need less syrup and must account for the added moisture. BASIC SUBSTITUTION: • Use ¾ cup maple syrup for every 1 cup of sugar. • Reduce other liquids in the recipe by 3 Tbsp (¼ cup) for each cup of maple syrup used. • Add a small amount of extra flour if needed to balance the batter. Maple syrup adds moisture and produces a chewier texture, making it a great fit for muffins, quick breads, and soft cookies. CONVERSION RATIOS GRANULATED SUGAR: Use ¾ cup maple syrup per 1 cup sugar, reduce other liquids by 3 Tbsp. BROWN SUGAR: Use 1:1 maple syrup, but still reduce liquids as above. RECIPE TIPS FOR MAPLE SYRUP • REDUCE LIQUIDS: Because maple syrup is a liquid sweetener, decrease other wet ingredients to maintain consistency. • ADD FLOUR IF NEEDED: A tablespoon or two helps if the batter is thin. • TEXTURE CONSIDERATIONS: Expect softer, moister, chewier results. • FLAVOUR IMPACT: Maple syrup brings a warm, rich flavour that pairs especially well with whole grains, nuts, and fall spices. WHEN NOT TO SUBSTITUTE MAPLE SYRUP Avoid using maple syrup in recipes that rely heavily on creaming butter and sugar (e.g., some pastries or cakes).
