Strong wholesale beef values continue as tight supplies offset seasonal market pressure
The U.S. beef market is showing an unusual trend this year. While cattle prices have dropped significantly since July, wholesale beef values have remained relatively steady. This has created a disconnect between live cattle markets and the value of beef sold through the supply chain.
A key measure used by the industry is the beef cutout value, which represents the combined value of major beef cuts from a carcass. It is widely viewed as a benchmark for wholesale beef prices and provides a clear picture of market demand.
Before the Independence Day holiday, the Choice beef cutout reached high levels. As is typical in the seasonal market pattern, prices declined following the holiday period. Cutout values then recovered through August as demand strengthened ahead of Labor Day.
Since late August, wholesale beef prices have remained within a relatively narrow range. Although values are below the record highs seen during the same period last year, they continue to be historically strong. Last year's September rally reached extraordinary levels, making year-over-year comparisons challenging.
Performance among individual beef cuts has varied considerably. The rib section has been the strongest performer and is the only major primal cut posting new highs this year. Demand ribs often increase ahead of Thanksgiving and Christmas celebrations, supporting higher prices during the fall and early winter months.
Other cuts have followed a different path. Values for rounds, briskets, plates, and flanks have generally weakened in recent months. Seasonal demand patterns have contributed to these declines as consumer buying habits shift after the summer grilling season.
One of the most notable changes has been seen in flank cuts. Flank values have dropped sharply from their summer highs and are significantly lower than they were a year ago. The decline reflects changing demand as consumers move toward different beef products and purchasing patterns during the fall season.
Despite weakness in some cuts, the overall beef cutout has remained resilient. The strength of high-value cuts, especially ribs, has helped offset declines in other areas of the carcass. This balance has prevented wholesale beef values from falling as dramatically as cattle prices.
Looking ahead, seasonal trends suggest that beef cutout values may soften slightly during the fall months. Beef production normally increases during this period, and consumer demand often shifts as summer cooking activities come to an end. These factors can put pressure on wholesale prices.
However, market fundamentals continue to support the beef sector. Herd sizes remain relatively tight, limiting the supply of available cattle. Reduced beef supplies have been a major factor behind the strong market seen over the past several years.
Industry analysts expect beef cutout values to remain historically elevated even if modest seasonal declines occur. Tight supplies are likely to prevent significant price drops across the wholesale market.
For cattle producers, this outlook presents a mixed picture. While wholesale beef values remain favorable, seasonal patterns may limit opportunities for major price increases in the near term. The market will continue to watch supply conditions and consumer demand trends as the holiday season approaches.
Overall, the beef market remains supported by limited supplies and strong demand for selecting products. Even as cattle prices retreat from summer highs, wholesale beef values continue to demonstrate resilience, reflecting the strength of the broader beef industry.
