‘Where’s the Beef?’ Workshop Scheduled for Nov. 22 in Bonham

The Texas A&M AgriLife Extension Service office in Fannin County will host “Where’s the Beef? Economic and Legal Considerations for Direct Beef Sales Businesses” on Nov. 22 in Bonham.

The workshop will run from 8:30 a.m. to 4 p.m. at the Derrell Hall Education Center, 2505 N. Center St. Cost is $100, which includes lunch and a copy of the Where’s the Beef handbook. Online registration is available at https://tx.ag/WherersTheBeef.

About the workshop

“Many consumers are interested in purchasing beef directly from the farm, making this a prime opportunity for cattle producers,” said Tiffany Lashmet, J.D., AgriLife Extension agricultural law specialist and professor, Department of Agricultural Economics, Amarillo. 

“This workshop discusses how to retail beef to a direct-to-consumer market, including navigating legal protections, permitting requirements, labeling considerations and slaughter facility selection.”

This day-long course includes a meat specialist, a lawyer, an economist and a panel of direct beef sales producers as speakers.

Topics and speakers include:

  • Beef: From farm to plate and all things in between, Davey Griffin, Ph.D., AgriLife Extension meat specialist and professor, Department of Animal Science, Bryan-College Station.
  • Slaughter facility selection, permitting, liability, labeling and marketing claims, Lashmet.
  • Live and custom harvest budgets, record keeping, benchmarking and evaluation, David Anderson, Ph.D., AgriLife Extension specialist and professor, Department of Agricultural Economics, Bryan-College Station.
  • Beef cattle market outlook and risk management tools, Anderson.
  • Producer panel, Ron Gill, Ph.D., AgriLife Extension livestock specialist and professor, Department of Animal Science, Stephenville; retired U.S. Army Col. Max Krupp, owner, Halo K Cattle Co.; and Steven Little, Little Cattle Co.
