Ideal for culinary enthusiasts, DIY enthusiasts, or aspiring cheese entrepreneurs, learn from the professionals how to make, age and savor handmade artisan cheese. Whether it's crafting fresh mozzarella, a tangy brie or aged cheddar, the gift of cheese making is truly a unique expression of dairy love.

Michigan State University Extension is delighted to offer an Artisan Cheese Workshop from February 29 to March 2, 2024, at the MSU dairy plant. This three-day course is tailored for both beginners and those seeking to refine their cheese making skills. The workshop also provides valuable insights for individuals considering starting their own cheese making business.

Led by veteran cheesemakers and owners of Leelanau Cheese, participants will craft at least four different cheeses while deepening their understanding of the factors influencing cheese quality and the unique characteristics of various cheeses.

Primarily designed for those considering commercial cheese production, whether sourcing milk locally or purchasing it, this workshop explores the business potential of value-added dairy products. With cheese consumption in the United States reaching record highs, quality cheese is in high demand.

Registration for the cheesemaking workshop covers lunches but does not include lodging. Participants are encouraged to bring their favorite cheese or one they've made for a cheese tasting session, where they'll also learn about judging cheese quality from award-winning instructors Josh Hall and Gary Smith.

MSU Extension, in collaboration with the MSU Product Center, supports entrepreneurs in product development, packaging, and marketing planning.

Dr. Jay Calvert, Research Director with Zoetis, recently spoke to The Pig Site’s Sarah Mikesell at the 2023 Leman Swine Conference in St. Paul, Minnesota, USA, about his conference presentation on porcine reproductive and respiratory syndrome (PRRS) virus recombination.

“The number one problem in PRRS these days from a vaccine point of view is the emergence of new strains of PRRS. Since the beginning, we have had new strains and a lot of diversity,” said Dr. Jay Calvert. “We thought we knew it was all about mutation changes in amino acids and the individual strains over time, but they take on new characteristics.”

With the onset of more common whole genome sequencing and recombination analysis, Dr. Calvert says there is another mechanism, and recombination seems to be a key factor.
