Soybean seeds are made up of two parts: the seed coat (the outside cover that protects the seed) and the embryo (the part of the seed that develops into a
new plant). The cotyledons are part of the embryo and are the first leaf or pair of leaves within the embryo that stores food. Soybeans, like most legumes,
perform nitrogen fixation. Modern soybean cultivars generally reach a height of around 3.3 ft. and take 80–120 days from sowing to
harvesting.
